Pumpkin Spice Cookies

Your favorite chocolate chip cookie recipe turned fall. Make and enjoy for a bite of fall in your mouth.

 

Ingredients

For the cookies:

2 Sticks of butter (1 cup)

¾ Cup organic cane sugar

¾ Cup organic brown sugar

2 ¼ Cup organic all purpose flour 

2 ½ Teaspoons pumpkin pie spice

1 Teaspoon kosher salt 

1 Teaspoon baking soda 

2 Eggs 

1 Cup pumpkin puree 

1 Teaspoon vanilla extract

 

For the frosting:

1 Cup powdered sugar 

1-2 Teaspoons organic whole milk 

 

 

Directions:

 

1.     Preheat the oven to 350 degrees

2.     In a mixer whip the butter on medium speed for about 4-5 minutes 

3.     Add in the sugar and mix for another 1-2 minutes.

4.     While you’re whipping the sugar, whisk together the flour, pumpkin spice, baking soda, and salt and set aside 

5.     Add in the eggs and pumpkin puree and mix until just combined then add in the vanilla extract and mix.

6.     Slowly stir in the flour until everything is thoroughly mixed. 

7.     Line a couple of baking sheets with parchment paper and drop the cookie dough in 1-2 inch balls on the sheet. Bake for 12-15 minutes until golden brown and place on a wire rack to cool.

8.     While the cookies are cooling mix together the powdered sugar and milk starting with 1 tablespoon, adding a second if needed.

9.     Once cookies are fully cooled frost and enjoy. Store in an airtight container for 4-5 days.
